Overview

When the first star appears, the Polish Christmas table comes alive. For generations, Wigilia — the Polish Christmas Eve vigil — has been more than a dinner. It’s a choreography of small, deliberate acts: hay spread beneath a white tablecloth, one extra place set for the unexpected guest, a thin wafer broken and shared, a sky watched patiently for the first star.

This illustrated cookbook tells the story of Wigilia through three historic tables — the humble peasant table, the elegant manor table of the szlachta, and the lavish royal table of the Polish court — before traveling the map of Poland itself across six regions.

One Night, Three Tables

Travel from a candlelit peasant cottage, where twelve dishes were assembled from cabbage, mushrooms, and groats, to the manor houses of the szlachta, where the same fast was observed with silver and porcelain, to the royal kitchens of Wawel Castle, where saffron, almonds, and Madeira transformed a meatless vigil into a spectacle of majesty. The fast never changed. The table always did.

Six Regions of Poland

Silesia’s gingerbread dessert soups. Podhale’s highland mushroom broths. Kashubia’s hemp seed soup and potato pancakes. Mazovia’s herring and buckwheat. Podlasie’s forest mushrooms and fermented bread drink. Greater Poland’s sourdough and horseradish. Each region brought its own rivers, forests, and harvests to the same twelve-dish table.
