Polish Christmas Eve Fish Dishes: Carp, Herring and Easy Alternatives

Quick answer: Fish is the heart of the Polish Christmas Eve supper (Wigilia) because Advent is a period of abstinence, so the meal is meatless and fish replaces meat. Carp is the most famous Wigilia fish, usually breaded or lightly pan-fried, followed by herring in oil, in vinegar or in cream, and Greek-style fish (ryba po grecku). Trout, cod and salmon also appear on Polish tables, and they are the easiest stand-ins if you cannot find carp. You do not need all of them: one or two fish dishes are plenty, and there is no official list.
This guide covers only the fish. For the full menu, see our guide to the 12 dishes of a Polish Christmas Eve, and for the tradition itself start with What Is Wigilia?.
Why fish on Christmas Eve?
Wigilia is the final evening of the Advent fast, so the supper avoids meat. Fish became the traditional main dish, and as Mental Floss notes, over three-quarters of Poland lies far from the sea, so freshwater fish like carp are easier to get than sea fish. Carp has been eaten in Poland since the 13th century. After the Second World War it became a very popular Christmas choice because it was available and affordable, and today about 90% of domestic carp is sold around Christmas (Notes from Poland).
Carp (karp)
Carp is usually served breaded and fried or lightly sautéed, and it is traditionally the last of the twelve dishes. Sources differ on whether it is served hot or cold, so treat both as correct.
A simple pan-fried method. Polish Your Kitchen describes a home version that works with carp or a substitute:
- Cut the fish into steaks and soak them in cold salted water (about 2 tablespoons of salt) for 2 hours in the refrigerator, then rinse and pat dry.
- Season with pepper, coat lightly in flour and shake off the excess.
- Pan-fry in oil and butter over medium heat for a few minutes per side, then drain on paper towels.
- If the steaks are thick, finish them in the oven at 180 °C (350 °F).
Good to know.
- Many families buy carp a few days before Christmas Eve, some buy it live, and live carp in the bathtub is a well-known tradition. It dates from the era before home refrigeration. Today it is less common, and many shops will prepare the fish for you.
- Finding a carp scale at the table and keeping it in your wallet is said to bring good luck in the coming year (Notes from Poland).
Herring (śledź)
Herring is the most common second fish. In Poland you will see it:
- in oil (śledź w oleju), with onion rings;
- in vinegar (śledź w occie), marinated and eaten on dark rye bread (Polonist);
- in sour cream (śledź w śmietanie) (Polish Your Kitchen).
These are served cold, so they can be prepared a day or two ahead. Regional tables add variations, such as herring with apples on the Pomeranian coast; see our regional guide.
Other fish dishes
- Ryba po grecku: Greek-style fish, with cooked vegetables in tomato sauce, served cold. Polonist describes both a “gourmet” and an older version.
- Trout, cod and salmon also appear on Wigilia tables, prepared in different ways (Notes from Poland).
What to cook instead of carp
| Option | Why it works |
|---|---|
| Trout | A common stand-in for carp, and easy to find |
| Cod | Mild and firm, and good for frying |
| Striped bass | Recommended by Polish Your Kitchen as nearly indistinguishable from carp |
| Mahi mahi | Similar in size and firmness, according to the same source |
| Salmon | Appears on Polish Christmas Eve tables |
Choose a fish you can buy fresh, and use the same method as for carp.
Planning the fish for your Wigilia
- Cold dishes first. Prepare herring and Greek-style fish on December 22 or 23.
- Cook the fried fish on December 24. Fry it last and keep it warm in the oven.
- Keep the head and tail for fish soup or broth, if you use whole fish (Polish Your Kitchen).
- Do not overdo it. Two fish dishes plus the other classics make a complete table; our week-by-week planning guide shows how to schedule everything.

Frequently asked questions
Why do Poles eat fish on Christmas Eve?
Advent is a period of abstinence in the Catholic Church, so Wigilia is a meatless supper and fish takes the place of meat. Meat returns to the table on Christmas Day.
Do I have to serve carp for Wigilia?
No. Carp is the best-known fish, but herring, trout, cod and salmon also appear on Polish Christmas Eve tables, and there is no official list of twelve dishes. Choose the fish you can find fresh and enjoy.
What can I use instead of carp?
Trout and cod are common stand-ins. One Polish-American food writer recommends striped bass, which she says is nearly indistinguishable from carp, and mahi mahi, which is similar in size and firmness (Polish Your Kitchen).
What is ryba po grecku?
Ryba po grecku, or Greek-style fish, is fish topped with cooked vegetables in a tomato sauce. It is a popular cold fish dish on Polish Christmas tables despite its name.
Is it true that Poles keep live carp in the bathtub?
It was a common practice for decades, because families bought live carp to keep it fresh before home refrigeration was widespread. It has become less common, and some large supermarkets in Poland have stopped selling live carp. Today many shops will prepare the fish for you.
Which fish can I prepare ahead?
Herring dishes and fish in aspic or tomato sauce are served cold and can be made one or two days ahead. Fried carp or its substitutes are best cooked on December 24.
